Chinese Style Menu

Chinese-inspired buns and dumplings are stuffed with a variety of fillings, folded, and steamed. These are served with a black vinegar chili sauce and our chili oil. Your group will learn to fold their own baozi or dumplings before our staff cooks them up for you.

Savory Chinese Crepes "Jianbing"
Chinese-inspired crepes are made on site, with fresh eggs cracked directly into a mung bean crepe, which are then topped with cilantro, scallions, crispy wontons, a savory bean sauce, lettuce, pickled cabbage and carrots, and optional pork topping. Your group will be able to assist in cooking their own crepe by scrambling the eggs directly into the pancake and selecting all of their own toppings.

Xinjiang/East Turkestan Inspired Big Plate Chicken
Tender bites of chicken are stewed in a richly spiced fermented bean paste and chili sauce along with bell peppers and potatoes. Served over thick-cut noodles.

Shandong Inspired Braised Chicken Rice
Tender chicken is braised in a shitake mushroom and sweet fermented bean paste sauce with red bell peppers. Served with short grain white rice.
Xinjiang/East Turkestan Inspired Cumin Lamb Noodles
Tender lamb is stewed in a rich and spicy fermented bean paste sauce with cabbage, Chinese chives, and long green chilies, served over thick cut noodles.

Red Braised Beef
Tender cuts of beef brisket are simmered in a rich and savory red-braise for more than two hours along with potatoes, scallions, and Sichuan peppercorns.
Hot and Dry Wuhan Noodles
Peanut butter and tahini sauce coats tender wheat noodles served with fresh greens, pickled beans, and crushed peanuts.

Mapo Tofu
Fresh cubes of soft tofu are simmered in a rich broth seasoned with shitake mushrooms or pork, fermented broad bean paste, and Sichuan peppercorns. This is delicious served with white rice.

Dry-Fried String Beans
String Beans are blistered in a hot wok with garlic and a spicy chili sauce.
Stir-Fried Lotus Root
Crispy lotus root is stir-fried with peanuts, chilies, scallions, and Sichuan peppercorns.
Chinese Broccoli Tips or Baby Bok Choy
Fresh greens are cooked in a garlic and fermented tofu sauce until tender.
Vegetable Fried Rice
Tender rice is stir-fried with fresh seasonal vegetables, fermented black beans, and pickled mustard stems.
Persian Inspired Menu
Chicken Fesenjan
Fesenjān is a decadent stew of chicken, pomegranate molasses, ground walnuts, spices that is traditionally served on the Iranian winter solstice festival.
Khoresh-e Bademjoon
Fresh eggplants are charred over over a hot fire, then stewed together with tomatoes, spices, and is finished with eggs cracked directly into the dish. This is served with Persian- style rice.
Kuku Sabzi
Kuku Sabzi is a traditional Persian omelet typically served at Nowruz (Persian New Year). Ours is packed full of farm-fresh spinach, parsley, cilantro, dill, spices, and topped with dried cranberries and walnuts.
Tamarind-Stuffed Fish
Striped bass, or a similar white-flakey fish, is seasoned with a thick paste of tamarind, caramelized onion, ground almonds and barberries and served whole.
Chelo ba Tahdig
Traditional Persian-style saffron rice is bright yellow in color and has a coveted crispy base.
Koufteh Ghelgheli
Tender lamb meatballs are cooked in a fragrant broth of turmeric, onions, and lemon juice, and accompanied by carrots and potatoes.
